When heated at high temperatures, magnesium L-ascorbic acid phosphate is more stable than ascorbic acid, making it suitable for nutritional fortification of high-temperature processed foods. According to Chinese regulations, it can be used in foods containing fats, edible fats, hydrogenated vegetable oil, and instant noodles, with a maximum usage of 2g/kg.
